Large “Typica” varietal grade HB (Hard Bean). The coffee cherries are sourced from the dominant cultivar used in Peru. Both acidity and body are medium, but the typica, combined with altitude and the soil-microclimate, produces an interesting flavor mix the Peruvian region is so well known for. This bean is cultivated in Northern Peru; Cooperativa Agraria Sangarini and grown under a canopy of shade. Most shade-grown coffees mature at a slower rate which allows the natural sugar present in beans to develop more fully and, as a result, more intense and rich flavors are produced.
